To make a delicious, moist fig cake, choose ripe, sweet, and juicy figs that are still firm enough to cut without falling apart. You can use either green or black figs, depending on availability and taste. Before adding them to the batter, wash them gently and dry them thoroughly. If the skin is thin and the fruit is intact, peeling isn't necessary: you can cut them directly into slices and arrange them on top of the cake. They will soften as they bake and release some of their juice, making the cake even more fragrant.

How to get a soft and well-leavened cake

To obtain a soft and fluffy dough, it's important that the butter, eggs, and milk are at room temperature. Beat the butter and sugar well with a whisk until light and creamy, then add the eggs one at a time. Add the flour little by little, preferably sifted with the baking powder, avoiding over-mixing the dough. This will ensure the cake retains a soft and light texture.

Fig cake: which variations should you try?

The recipe lends itself to several variations. You can add grated lemon zest to the batter or a pinch of cinnamon, which pairs particularly well with the sweetness of the figs. For a crunchy touch, try adding chopped almonds, walnuts, or hazelnuts. Dark chocolate is also a great pairing: a few pieces in the batter will make the cake even more indulgent. If you prefer a more delicate result, you can replace part of the milk with plain yogurt.
