Cutlets in mustard sauce
More cutlets!
More cutlets! But these are unusual—in mustard sauce. Even gourmets will be amazed by these. Firstly, they're made from beef alone, and secondly, they're juicy and tender. This is thanks to the exquisite mustard and cream sauce. This combination softens the ground beef and imparts a piquant flavor. Another secret to tender cutlets is adding onions to the ground beef. It should make up at least 30-50% of the total. You can use any kind of mustard, grainy or table, but a heavier cream is preferable—22% or higher. Serve these cutlets as a main course with any side dish—mashed potatoes, buckwheat, rice, or bulgur.
Step 1
To make meatballs with hot sauce, you'll need the following ingredients: ground beef, a couple of large onions, a small bunch of parsley, an egg, and vegetable oil. For the sauce, use heavy cream, Dijon mustard, and salt.
Step 2
For the cutlet mince, chop the onion and parsley in a blender. Press the garlic through a garlic press. Transfer the ground beef to a deep bowl, add the onion, parsley, garlic, and egg. Season with salt and pepper and mix thoroughly. Cover with plastic wrap and refrigerate for 40-60 minutes to set.
Step 3
Remove the prepared minced meat from the refrigerator and, using your hands dampened with water, form it into patties the size of a large plum. Fry them in a deep frying pan in hot oil until golden brown, about 8 minutes. Remember to turn them over.
Step 4
Combine the heavy cream and mustard, stir with a fork, and pour into the pan with the cutlets. Cover and simmer the cutlets in the mustard sauce for about 20 minutes over low heat. Serve with any side dish.
