Smoked sardines on toast with ricotta & tomato
Whether making for a hearty breakfast or quick midday meal, these smoked sardines on toast will bring a touch of gourmet to your day.

- 8 thick slices sourdough
- ⅓ cup (80ml) extra virgin olive oil, plus extra to serve
- 400g cherry truss tomatoes
- 1 clove garlic, crushed
- 1 tablespoon lemon juice
- 2 teaspoons balsamic vinegar
- 1 tablespoon honey
- 1 cup (240g) smooth ricotta
- 2 x 105g cans smoked sardines in oil
- 2 tablespoons chopped chives
- Chilli flakes, optional, to serve
Method · 15 min
- Preheat the oven grill to high. Place the bread on a large baking tray. Brush both sides of the bread with 2 tablespoons oil. Grill for 2 minutes on each side, or until golden and toasted.
- Meanwhile, heat the remaining oil in a large frying pan over medium-high heat. Add the tomatoes and cook for 5 minutes, stirring occasionally, or until softened.
- Add the garlic and cook for 1 minute or until fragrant. Remove from the heat. Add the lemon juice, balsamic vinegar and honey, season and stir to coat. Gently crush some of the tomatoes with a fork to release the juices and stir to combine.
- Spread the ricotta over the toasted bread. Top with the tomatoes and pan juices. Divide the drained sardines between the toasts. Sprinkle with chives, salt, pepper and chilli flakes, if using. Drizzle with a little extra oil to serve.

What to add to tinned sardines on toast
We’ve served our sardines on toast with ricotta and tomatoes, sprinkled with chilli flakes and chives. You can omit the chilli for less heat, if preferred.
