Mini Lasagna with Fish Fillet and Mushrooms

Meat lasagna is an unquestionable and integral part of Italian cuisine.

Step 1

Transfer the mushrooms from the freezer to the refrigerator ahead of time. Sift the flour and salt, beat in the eggs, and knead the dough. If it's too stiff, add a little water. Wrap in plastic wrap and let rest for 1 hour. On a floured surface, roll the dough out thinly and cut out 16 circles, each 9 cm in diameter.

Step 2

Cook the dough in boiling salted water for 2–3 minutes. Using a slotted spoon, transfer to a bowl of cold water, then let dry on a towel.

Step 3

Wash the fish fillet, dry it, and cut into small pieces.

Step 4

Pat the mushrooms dry with a towel and cut into random pieces. Peel and chop the garlic. Wash the tomatoes, dry them, and cut them into quarters.

Step 5

Heat 2 tablespoons of olive oil in a frying pan, add the garlic, and sauté for 2 minutes. Add the mushrooms and cook for 5 minutes over high heat. Add the fish fillet and tomatoes, season with salt and pepper. Cook for another 3 minutes, then transfer to a plate.

Step 6

Place a circle of cooked dough on a greased baking sheet, top with 1 tablespoon of filling, then the next layer and filling. Continue alternating layers until you have 4 layers of dough and 3 layers of filling. Drizzle the lasagna with the remaining olive oil. Preheat the oven to 180°C and warm the lasagna for 10 minutes.

Meat lasagna is an unquestionable and integral part of Italian cuisine. Incidentally, the first recipe for this dish was found near Naples, in a 14th-century manuscript. However, that lasagna was completely meatless: flat sheets of pasta dough were boiled in water, then sprinkled with grated cheese, pepper, and spices, and stacked. Later, the dish evolved into a huge number of variations, one of which, perhaps the most popular, originated in northern Italy, in Bologna. Local chefs would prepare the lasagna filling with minced meat, tomatoes, and other vegetables, layer it on sheets of dough, generously drizzle it with béchamel sauce, and sprinkle with grated Parmesan. The result was simply delicious! They say the best meat lasagna can be found in small, family-run restaurants, far from the bustling tourist trails.
