
How to make gyozas: the easiest recipe for the popular (and delicious) Japanese dumplings
You've probably seen gyoza, or Japanese dumplings, in books, on websites, and on social media. They're a delicious and visually appealing snack that, contrary to what it might seem at first glance, are very easy to prepare. Perhaps the trickiest part of this gyoza recipe is finding the wrappers. They're sold in Asian grocery stores, and if you have one nearby or happen to be passing by, we recommend stocking up on a couple of packages. They freeze perfectly. They're so delicious you'll want to make them often, served with soy sauce. Normally, the dumplings are filled with vegetables and beef, but you can also make chicken gyozas.
Remove the central rib from the cabbage leaf and discard it. Finely chop the green part. Clean the shiitake mushrooms and finely chop them. Peel and mince the garlic clove. Peel and chop the spring onions. Mix all of the above with the minced pork and add the white wine, sesame oil, and soy sauce. Season with salt and pepper to taste. Place a wrapper on the palm of your hand, moisten the edges with water, and place a teaspoon of the filling in the center of the wrapper. Fold it in half and seal by crimping the edges. Repeat until all the wrappers are filled. Heat the oil in a frying pan over medium-high heat, place the gyozas on the flat side, and fry for about three to four minutes, or until the bottoms are golden brown. Next, add 60 ml of water to the pan, cover, and let the gyozas steam for about four more minutes, or until the water has almost evaporated. Meanwhile, mix the rice vinegar and soy sauce in a small bowl so each person can dip their gyozas when they're ready.
What to serve with gyozas
Gyozas, or Japanese dumplings, are dipped in sauce on the way to your mouth. Ours is a mixture of rice vinegar and soy sauce, but you can use others like hoisin, teriyaki... or make your own versions.
