Shepherd's Potato Pancakes: a recipe from a chef from Zakopane
Shepherd's potato pancakes are thick pancakes filled with an aromatic filling made from ingredients associated with the mountains.
Ingredients · Servings 3-4 people
- 1 kg of potatoes
- 1 onion
- 1 egg
- 2 tablespoons of wheat flour
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- ½ teaspoon of marjoram
- 150 g of oscypek cheese
- 100 g bryndza cheese
- 150 g smoked bacon
- 1 small onion
- 1 clove of garlic
- 2 tablespoons of sour cream 18%
- ½ teaspoon of black pepper
- 150 g smoked bacon slices for wrapping
- frying oil
Method · 1 h
- Prepare the potato pancakes. Peel and finely grate the potatoes. Grate the onion after peeling. Transfer the mixture to a sieve and lightly squeeze out any excess liquid, then transfer it to a bowl.
- Add all the remaining ingredients to the potato mixture and mix until smooth.
- Heat oil well in a frying pan. Add 1-2 tablespoons of the potato mixture at a time, forming slightly thicker pancakes. Fry until golden brown on both sides, about 2-3 minutes.
- Place the finished pancakes on paper towels.
- Prepare the filling. Dice the bacon into small cubes. Sauté in a dry pan until golden brown. Then add the finely chopped onion, and finally the pressed garlic. Cook until translucent.
- Grate the oscypek cheese on a large grater and mix with the crumbled bryndza cheese. Add the slightly cooled bacon, cream, and pepper. Mix thoroughly.
- Assemble the pancakes. Spread the bacon slices evenly on a baking sheet lined with baking paper. Then, place half of the potato pancakes at one end, allowing them to wrap around each other. Place 1-2 tablespoons of filling on each pancake and top with the other half.
- Place the whole thing in an oven preheated to 190 degrees Celsius and bake for 10 minutes, until the meat is nicely browned.
- Serve the shepherd's potato pancakes immediately after preparation, while they are still hot and crispy.
