Cheese soup with soy milk

Cheese soup with soy milk will delight lovers of strong cheese flavors. Olomouc cheeses melt beautifully when cooked, beer and caraway emphasize their typical flavor, and whipped cottage cheese makes each serving pleasantly soft.

Ingredients · Servings 1 dose
  • 600 ml soy milk
  • 100 g Olomouc cheese
  • 100 g low-fat cottage cheese
  • 1-2 tablespoons beer
  • 10 g butter
  • 1/2 teaspoon ground cumin
  • To serve:
  • wholemeal bread
Method · 20 min
  1. Pour the soy milk into a saucepan, add the beer, butter and half of the ground cumin. Bring to a boil, stirring occasionally.
  2. Cut the Olomouc cheese into smaller pieces and add them to the hot milk. Heat over low heat, stirring constantly with a whisk, until the cheese has melted and the soup is smooth.
  3. Beat the cottage cheese until smooth and divide it into two bowls. Pour the hot soup over it and sprinkle the remaining cumin on top.
  4. Serve the cheese soup immediately, preferably with wholemeal bread.
