Recipe for ham, goat cheese and smoked paprika muffins
For a change from peanuts, chips, and the like at aperitif time, I'm opting for a savory muffin recipe. I open the fridge and improvise the filling: ham and goat cheese, and to add a different flavor, a touch of smoked paprika. Don't have all the ingredients?
Ingredients · Servings 12
- 150g of flour
- 50 ml of milk
- 50 ml of full liquid cream
- 2 eggs
- 2 tablespoons of oil
- 3 pinches of smoked paprika
- 1 tablespoon of bicarbonate of soda (or half a packet of baking powder)
- 75g of Goat's Cheese Log
- 75g of diced cooked ham
Method · 30 min
- Preheat the oven to 180°
- In a large measuring cup, whisk together the eggs, milk, cream, and oil. In a separate bowl, combine the flour, baking soda (or baking powder), and smoked paprika. Cut the goat cheese log into pieces, roll them in the egg mixture, and do the same with the diced ham. Combine the two mixtures, being careful not to overmix; the texture should remain slightly crumbly. Line muffin tins with paper liners (or other shaped liners) and fill them two-thirds full with batter.
- Bake for 20 minutes at 180°C. Let cool or enjoy warm.
