How to Use Sumac in Dried Stuffed Vegetables?

Sumac holds an important place among the ingredients that enhance the unique flavor of stuffed dried vegetables. Thanks to its sharp yet pleasant aroma, it pairs particularly well with tomato-based and spiced fillings. When using sumac, it's not just the quantity that matters, but also when it's added to the dish.

Preparing and Using Sumac Water: One of the most practical ways to use sumac in stuffed dried vegetables is to prepare sumac water. To do this, simply steep about 2 tablespoons of sumac in a glass of hot water for 15-20 minutes. After straining the sumac, the resulting sour water can be added to the stuffing or cooking water of the stuffed vegetables. Adding sumac water to the cooking water ensures that the sour aroma is evenly distributed throughout the stuffed vegetables. If a more intense sourness is desired, the amount of sumac can be increased in a controlled manner.

Sumac Can Be Added to the Filling: Sumac can also be added directly to the filling of stuffed dried peppers as a spice. Used with rice, onions, tomato paste, and other spices, sumac gives the filling a pleasant sourness and its own unique aroma. Approximately 1 teaspoon of sumac can be used as a starting measure for a medium-sized pot of stuffed peppers. Since the intensity of sumac sourness can vary depending on the brand and type of product, the amount should be adjusted according to taste. It is important to be moderate, as using too much sumac can overpower the other aromas of the stuffed peppers.
