Should the filling of dried stuffed vegetables be raw or cooked?

Whether or not the filling is pre-cooked is one of the details that directly affects the consistency of the dish when preparing dried stuffed vegetables. The fact that rice expands in volume during cooking makes the amount of stuffing to be crucial.

Rice is Usually Used Raw: In the filling of dried stuffed vegetables, rice is mostly used raw. Raw rice absorbs the water and aroma of the spices while cooking inside the stuffed vegetables, enhancing their flavor. This method ensures a more cohesive filling inside the stuffed vegetables. Pre-boiling the rice, however, can lead to it becoming too soft during cooking and the filling becoming mushy. Therefore, it is more common to use uncooked rice in traditional dried stuffed vegetable recipes.

The Filling Can Be Sautéed Beforehand: Although the rice inside the stuffed dried peppers is raw, the filling, prepared with onions, tomato paste, and spices, can be sautéed beforehand. Softening the onions in olive oil gives the filling a more intense aroma. Briefly sautéing the tomato paste also helps reduce the raw tomato paste taste. Then, the washed raw rice can be added and the filling stirred for a few minutes. In this way, the rice is blended with the oil and spices before it is fully cooked.

Stuffed Vegetables Should Not Be Completely Filled: When using raw rice, it's crucial to consider that it will expand in volume during cooking. Therefore, dried eggplants and peppers should not be completely stuffed; a space should be left at the top. Generally, filling about two-thirds of the vegetable is sufficient for the rice to expand comfortably. Overstuffing can cause the filling to spill out during cooking, distorting the shape of the stuffed vegetables. Using the correct amount of filling ensures both a successful appearance and a good consistency.
