Castagnole with cocoa, hazelnuts and coffee
These cocoa, hazelnut, and coffee castagnole are a soft and tasty treat, even the next day. Perfect for Carnival celebrations, they're a must-try.

INGREDIENTS: Serves 6-8 people
- 2 eggs
- 80 g of granulated sugar
- 65 g of butter at room temperature
- 270 g of 00 flour
- 30 g of bitter cocoa powder
- 50 g chopped hazelnuts
- 50 g chopped almonds
- 65 g of ready-made coffee
- 7 g of baking powder
- a pinch of salt
- vanilla flavor
- seed oil for frying to taste
- granulated sugar to garnish to taste

To prepare this recipe, start by breaking the eggs into a bowl with the sugar and a pinch of salt and begin whisking until the mixture is light and frothy.
Once this is done, add the butter, continuing to beat. Once thoroughly combined, add the sifted flour, baking powder, and cocoa powder. Add the vanilla extract and refrigerate for about an hour.
After the indicated time, pour the dough onto a pastry board and work it into sausage-like shapes, then cut into small pieces and shape them into balls; it's best to make them all the same size. Heat some vegetable oil for frying in a pan and bring to temperature.
Fry the balls a few at a time, then drain and dry them on paper towels. Once done, toss them in a bowl with granulated sugar and they're ready to serve.
