Ladyfinger biscuits: salvaging a failed recipe

  • 2 eggs
  • 55 g of powdered sugar
  • 55 g of flour
  • 7 g of potato starch
  • icing sugar for sprinkling
Method · 25 min
  1. Separate the yolks from the whites.
  2. Put the whisk in and whisk the egg whites, adding the granulated sugar and cornflour from the start, and mix for 4 minutes / 37°C / Speed ​​3.5.
  3. Add the egg yolks and mix for 1 minute / Speed ​​3.5.
  4. Remove this dough from the bowl and add the flour with a spatula without overworking the dough.
  5. Place on a sheet of parchment paper or in a greased cookie sheet.
  6. Sprinkle generously with icing sugar and let rest for 15 to 20 minutes.
  7. Bake for 10 to 15 minutes at 150°C.
