Done in: a few minutes

Cooking: oven, 180° for 15 minutes.

  • baking paper
  • Ingredients
  • grated organic lemon zest to taste
  • 32 g of egg yolks
  • 5 tablespoons of semi-skimmed milk
  • a pinch of salt
  • 16 g baking powder
  • 8/9 cup powdered sugar
  • half a 300g block of butter
  • 50 g of potato starch
  • 22 and a half tablespoons of cake flour
  • scented icing sugar with a pinch of cinnamon to complete as needed

Homemade shortcrust pastry sun slices, procedure

Cream the chopped butter with the sugar and fold in the egg yolks, baking powder, citrus zest, salt, and sifted flour and starch. Finally, stir in the milk and shape the mixture into a loaf. Roll out the dough until it's 5 mm thick, then cut it into half-moon shapes.

Make small incisions in each cookie and place them, spaced appropriately apart, on a baking sheet lined with parchment paper. Brush them with egg white before baking at 180°C (350°F) for 15 minutes. Once the baking time is up, remove the cookies from the oven and let them cool before dusting them with powdered sugar mixed with a pinch of cinnamon.
