The cake of memories, lemon and almonds, my grandmother always prepared it for breakfast, serve it with cold milk and you will face the day in the best way

This memory cake is made with lemon and almonds, my grandmother always made it for breakfast, try it too!

If you want to win over everyone at breakfast and make sure they wake up without too many tantrums, go for this cake, not only soft, but also fragrant and irresistible.

Slice after slice, it will win over everyone, even the little ones. The advantage is that the dessert will keep for a couple of days under a glass dome or in an airtight container.

Almond and lemon cake: soft, fragrant, and tasty—what more could you want?

The preparation is very simple: just a few simple steps for an exceptional result. Without further ado, put on your apron and get to work.

4 eggs

180 g of whole cane sugar

200 g of almond flour

100 g of potato starch

1 jar of Greek yogurt

150 g of butter

1 sachet of baking powder

grated peel of an untreated lemon

juice of a lemon

80 g of peeled almonds

powdered sugar to taste

Almond and lemon cake recipe

To make this cake, we start by washing the lemon thoroughly, extracting the zest and juice, which must be strained. Then, we arrange all the ingredients on a work surface.

Then, in a bowl, beat the eggs and sugar using an electric whisk until smooth and frothy. After several minutes of mixing, add the almond flour and potato starch, which must be thoroughly incorporated into the remaining ingredients.

We also add the sachet of baking powder, the yogurt and the grated lemon zest, the sachet of vanilla, the butter must be added in pieces and must not be too cold.

Continue mixing the ingredients with an electric mixer until smooth and lump-free. Stir in the chopped almonds using a spatula. Now transfer the mixture to a greased and floured cake pan. Level the batter and bake in a preheated oven at 180°C (350°F) for about 40 minutes.

Once cooked, turn off the oven, but to be sure the cake is cooked, we recommend doing the toothpick test, only in this way will we have confirmation of its cooking.

Once cooked, turn off the oven, let the cake cool and then remove it from the pan, place it on a serving plate, dust with icing sugar and serve.
