To make the apple and pear pie, start by washing the fruit, peeling it and removing the cores and seeds. Cut it into thin slices, set aside in a bowl, and add the lemon juice, after removing the peel.

Let's make the dough: in a bowl, beat the eggs with the whole cane sugar using an electric whisk. Once the mixture is smooth, add the gluten-free flour and, once incorporated, add the milk and sunflower seed oil.

Finally, add both the grated lemon zest and the gluten-free baking powder, pour the resulting mixture into the well-oiled cake pan, level it and distribute the apple and pear slices over the surface of the mixture, overlapping them slightly.

Sprinkle a little brown sugar over the cake and bake in a preheated oven at 180°C (350°F) for about 45-50 minutes. Always test with a toothpick to ensure the cake is cooked through; click here to avoid mistakes. Turn off the oven once the cake is cooked and let it cool, then dust with powdered sugar and serve in slices.
