Brioche is one of those recipes you never tire of making. Soft, comforting, and delicious, it's perfect for breakfast or an afternoon snack. But lately, a lighter version has been gaining a lot of attention. Have you ever heard of cloud brioche?
This version is even lighter and airier than the traditional one. In a new video posted on social media, content creator Dr. Flow en cuisine (Dr. Flow in the Kitchen) tried it out and shared the recipe to achieve the same result. What sets this version apart from classic brioches is, above all, its surprising texture. There's no dense or overly rich crumb here.
The result is a light, almost ethereal brioche that seems to disappear in your mouth. This culinary feat is made possible by a few carefully chosen ingredients and a specific preparation method. First, the influencer replaces flour with cornstarch.
This trick results in a much finer and lighter texture. But that's not the only detail that makes all the difference in this recipe. To give the brioche its airy appearance, the dough is whipped for a long time with an electric mixer. For an extra touch of indulgence, the young woman finishes her recipe by adding a sprinkle of chocolate chips. It really makes your mouth water!
The ingredients:
- 150g of egg white (or the whites of 5 eggs)
- 1 tablespoon of Maizena (cornstarch)
- 2 teaspoons of pitaya powder (optional)
- 1 teaspoon of liquid vanilla extract
- 2 generous handfuls of chocolate chips
The procedure to follow:
Start by placing the egg whites in a mixing bowl. Then, add the cornstarch. Incorporate the pitaya powder if desired. Pour in the vanilla extract. Mix everything together using an electric mixer. Once the mixture is very light and airy, fold in the chocolate chips.
Gently stir with a spatula. Spread the batter onto a baking sheet lined with parchment paper. Bake the cloud brioche for 30 minutes at 180 degrees Celsius (350 degrees Fahrenheit). Once baked, let it cool for a few moments and enjoy!
