- 1 Shortcrust pastry
- 250g Button Mushrooms (blond)
- 1 Onion(s)
- 3 hard-boiled eggs
- 20 cl Fresh cream
- 10 cl Semi-skimmed milk
- 80g grated Emmental cheese
- 10 g Butter
- 1 tbsp olive oil
Method · 45 min
- Preheat the oven to 180°C (350°F) so it's nice and hot when you put the mini quiches in. Meanwhile, take the shortcrust pastry out of the refrigerator so it's easier to handle. Lightly butter mini tartlet tins or a muffin tin if necessary, depending on the equipment you're using.
- Peel the onion and slice it thinly so it softens during cooking. Clean the button mushrooms with a clean cloth or damp paper towel, then chop them into small pieces. Next, peel the hard-boiled eggs and roughly chop them. This preparation will make the rest of the recipe easier.
- Heat the olive oil and butter in a pan over medium heat. Add the chopped onion and sauté for a few minutes until softened and slightly translucent. Then add the mushrooms and cook, stirring regularly, until all their liquid has evaporated.
- In a bowl, combine the crème fraîche and semi-skimmed milk, then mix thoroughly. Add the chopped hard-boiled eggs and grated Emmental cheese, then stir to combine. Finally, stir in the slightly cooled sautéed mushrooms and onions. You should obtain a smooth, creamy, and well-balanced filling for the mini quiches.
- Roll out the shortcrust pastry on your work surface, then cut out discs to fit your tartlet tins using a cookie cutter or a glass. Line each tin with a pastry disc, pressing gently. Then, divide the mushroom mixture evenly among the pastry bases, without overfilling them.
- Place the filled tartlet molds in the preheated oven and bake for approximately 20 to 25 minutes. Check them towards the end of baking: the mini-quiches should be golden brown on top and the pastry should be cooked through underneath. If necessary, bake them a little longer to achieve an appetizing result and a pleasant texture.
- Once out of the oven, let the mini quiches rest for a few minutes before carefully unmolding them. This resting time allows the filling to firm up slightly and makes them easier to handle. Serve them warm, if possible, to fully enjoy their melt-in-your-mouth texture and delicious flavor as an appetizer.
