Oatmeal and coconut cookies

These oat and coconut cookies are delicious treats that are perfect with a cup of tea or milk. Eggless and super quick.

Preparation time: 10′ Cooking time: 15′.

INGREDIENTS (serves 4)

  • 150 g of type 0 flour
  • 100 g of butter
  • 100 g of brown sugar
  • 90 g of oat flakes
  • 85g of dried coconut flakes
  • 55 g of whole cane sugar (Mascobado type)
  • 2 tablespoons of acacia honey
  • 2 tablespoons of water
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon baking soda
  • 1 pinch of vanilla powder

Oatmeal and coconut cookies, preparation:

To make these cookies, start by placing the flour, rolled oats, and coconut in a bowl. In another bowl, mix together the brown sugar, whole cane sugar, and vanilla.

Next, beat the butter, honey, and water until creamy. Add the baking soda and continue mixing. Then add the ingredients from the first two bowls.

You'll have a nice dough that needs to be divided into portions, first forming a ball and then placing it on a baking sheet lined with parchment paper. Flatten it into a round disk. Bake for 10-15 minutes at 160°C. Serve them cold; be careful, as handling them while hot can cause them to break.
