Pastel Opens Portuguese Bungalow Bakery in Chimbai Village, Bandra
Pastel has opened in Chimbai Village, Bandra, Mumbai, operating from a Portuguese bungalow and positioning bread and baking as the central part of its bakery format. The venture has been founded by twins Yash and Simran Advani along with Head Chef Supriya.

The bakery is built around bread-led offerings across different parts of the day, with a menu covering handhelds, tartines, French toast and other familiar formats. Its bread bar focuses on everyday bread prepared using different ingredients, techniques and baking processes.
“Pastel was always imagined around our love for baking, bread and the things we’ve grown up eating and coming back to,” says Y ash Advani, Co-Founder, Pastel. “We wanted it to be a space that transitions through the day, but remains rooted in the craft of baking—a place to slow down and let the food do the talking.”
Head Chef Supriya has placed baking techniques at the centre of the kitchen approach, with bread forming the base of the menu and new product drops planned around the bakery's offerings. “Breads have always been my true baby, and building a space led by baking techniques and putting bread at the centre is something I’ve always dreamed of. At Pastel, everything is intentional—from the breads we bake to the drops we introduce—with technique always leading the way.”
The menu also focuses on familiar food formats rather than introducing a separate concept for each daypart. Yash said the approach is based on using ingredients and preparation techniques to develop existing formats.
“There’s no need to overcomplicate what already works,” says Yash. “It’s about good ingredients, thoughtful details and food that makes you want to come back for another bite.”
Pastel has also introduced a dedicated Nova Gelato shop-in-shop within the bakery. The offering brings gelato alongside the bakery’s warm bakes, while an affogato bar combines coffee and gelato.
Simran Advani, Founder, Nova Gelato and Co-Founder, Pastel, said, “Gelato has always been something I’ve been deeply passionate about, and bringing it into a space we’ve built together felt very natural. We wanted to give gelato the space it deserves, while creating a place where bread, baking and gelato can each have their own moment.”
With its location in Chimbai Village, the bakery operates within Bandra’s Portuguese and Konkan-influenced neighbourhood setting. Its format combines bakery products, coffee, gelato and day-long food offerings within a single outlet, giving the business multiple consumption occasions beyond traditional bakery purchases.
