Vichy Carrots in the Thermomix

The recipe for Vichy carrots is believed to have originated in the 16th or 17th century in Vichy, the town's spa town, where it was supposedly created by the restaurant's chef.

  • Shallots - 2
  • Garlic cloves - 3
  • Fresh parsley - 30 leaves
  • Semi-salted butter - 50 grams
  • Water - 40 grams
  • Powdered sugar (optional) - 1 teaspoon
  • Carrots - 550 grams
  • Pepper - 2 pinches
  • Chicken bouillon cube - 1
  • Thick fresh cream - 80 grams
Method · 48 min
  1. Place 2 shallots in the Thermomix bowl.
  2. Add 3 cloves of garlic to the Thermomix bowl.
  3. Add 30 fresh parsley leaves to the Thermomix bowl.
  4. Add the lid with the measuring cup
  5. Mix for 5 seconds/speed 5.
  6. Scrape the sides of the bowl with the spatula.
  7. Add the whisk.
  8. Add 50 grams of semi-salted butter to the Thermomix bowl.
  9. Add 40 grams of water to the Thermomix bowl.
  10. Add 1 teaspoon of powdered sugar (optional) to the Thermomix bowl.
  11. Add 550 grams of washed, peeled and sliced ​​carrots to the Thermomix bowl.
  12. Add 2 pinches of pepper to the Thermomix bowl.
  13. Add 1 chicken stock cube to the Thermomix bowl.
  14. Add the lid with the measuring cup
  15. Cook for 30 min/100°C/Speed ​​Spoon.
  16. Add 80 grams of thick cream to the Thermomix bowl.
  17. Add the lid without the measuring cup.
  18. Cook for 3 min/100°C/Speed ​​Spoon.
  19. Serve immediately.

Since then, many chefs have revisited the recipe, adding other ingredients such as crème fraîche, which inevitably makes it a little less diet-friendly than the original. What rarely changes is the mixture of butter, sugar, salt, and water that creates a glossy syrup. This mixture is then gently stirred to coat the carrot slices in the sauce. It's this final version, which you can prepare with your Thermomix, that I'm sharing with you here .

Place 2 shallots, 3 garlic cloves and 30 fresh parsley leaves in the Thermomix. Mix for 5 seconds / speed 5. Then scrape down the sides of the bowl with the spatula.

Add 50 grams of semi-salted butter, 40 grams of water, 1 teaspoon of caster sugar (optional), 550 grams of washed, peeled and sliced ​​carrots, 2 pinches of pepper and 1 chicken stock cube to the Thermomix. Cook for 30 min / 100°C / /.

Add 80 grams of thick cream to the Thermomix and cook for 3 min / 100°C / / without the measuring cup.
