Get a recent mushroom book. Some mushroom species are poisonous when raw, but both edible and delicious when cooked properly. Some must be boiled before eating and none should be eaten raw.
Follow these simple tips:
• Only eat mushrooms that you are sure of. If in doubt – contact the mushroom control department.
• Never eat mushrooms that are raw, undercooked/fried.
• Use only good quality mushrooms for cooking.
Use the latest mushroom literature when identifying mushrooms. Always remember to bring a proper, up-to-date mushroom book with you when you are out picking mushrooms.
