Healthy vegan waffles without sugar
These healthy waffles are a real treat for anyone who eats consciously. They're practically the perfect all-rounder 😉 Healthy vegan waffles without sugar, eggs, or butter. I haven't just swapped out the animal-based ingredients. These healthy waffles are also sugar-free and made with whole wheat flour.
- 200 grams of light wholemeal flour (or regular flour)
- 2 teaspoons of baking powder (preferably cream of tartar baking powder)
- 250 Milliliter Hafermilch
- 80 grams of fruit puree (preferably apple-banana)
- 2 tablespoons of sunflower oil (or coconut oil)
- Mix the flour with the baking powder. Whisk together the plant-based milk, the fruit puree (it should be quite thick), and the oil. Add the dry ingredients to the wet ingredients and stir well until a smooth batter forms. Add spices such as vanilla or cinnamon to taste, and sweeten if desired (see tips). Let the waffle batter rest for about 5 minutes.
- Heat the waffle iron and grease it well. Pour about a quarter to a sixth of the batter into the center, close the iron, and bake. The waffles taste good both warm and cold.
Honestly, I never thought healthy waffles could turn out so well. I did quite a lot differently from the classic waffle recipe. After all, these are waffles without eggs, sugar, butter, milk, or white flour. Instead, you need fruit puree like applesauce or mashed bananas, a little oil, a plant-based milk alternative, baking powder, and whole wheat flour. Of course, you can't compare the texture and taste exactly to the classic version. But I really love them because I love the subtle sweetness and the fluffy batter.
In my opinion, these are also perfect, healthy waffles for toddlers. No eggs, milk, or butter, to which some babies are allergic. Naturally sugar-free and without any sugar substitutes – which doesn't bother little ones at all! And they're made with whole wheat flour, too. So they fit perfectly into the clean-eating concept, which is also the focus of my eBook "Clean Baking – Natural Baking." Light whole wheat flour is particularly suitable for this recipe – an invaluable advantage when you have children: the appearance and taste are unobtrusive … But regular light spelt flour works well too.
