Halloween mendiants with dark chocolate

  • 200g Dark Chocolate
  • 50g Hazelnut praline paste
  • 50g Slivered Almonds
  • 30 g Raisins secs
  • 30g dried cranberries
  • 20g Mini marshmallow
  • 20g Orange Sugar Paste
  • 20g Green sugar paste
  • 20g White chocolate chips

  1. Start by arranging all the ingredients on your work surface to save time when assembling. Cut the orange fondant into very small triangles or thin strips to create details reminiscent of pumpkins or Halloween motifs. Then shape the green fondant into small stems or mini leaves. Also set aside the white chocolate chips, which will be used to add visual contrast to the mendiants.
  2. Place the slivered almonds, raisins, dried cranberries, and mini marshmallows in separate small bowls. This will save you time once the chocolate is poured, as you'll need to decorate the mendiants before it sets. If some of the mini marshmallows seem too large, you can cut them in half for a more uniform and easier-to-eat result.
  3. Break the dark chocolate into pieces and melt it gently in a double boiler or in microwaves for a few seconds at a time, stirring regularly to prevent burning. Once smooth and glossy, add the hazelnut praline paste. Mix thoroughly until you have a homogeneous, supple, and fragrant mixture. This base will give you richer, more melt-in-your-mouth mendiants.
  4. Line a baking sheet, tray, or board with parchment paper. Using a spoon, drop small mounds of praline chocolate onto the parchment paper, spacing them slightly apart, then gently spread them into discs. Try to keep them a consistent size for a neater presentation. Work fairly quickly so the chocolate remains pliable and each mendiant can be easily decorated without breaking.
  5. Immediately scatter a few slivered almonds, raisins, dried cranberries, and mini marshmallow pieces over each disc. Then add the orange and green fondant elements to create a festive Halloween-inspired decoration. Finish with a few white chocolate chips to accentuate the contrast. Gently press the toppings with the back of a spoon so they adhere well to the still-soft chocolate.
  6. Place the mendiants in the refrigerator for about 30 minutes, or until the chocolate is completely firm. Make sure the tray is perfectly flat so the discs retain a nice, even shape. During this time, avoid handling them to prevent the decorations from shifting. This resting period is essential for achieving neat mendiants that are easy to remove and pleasing to serve.
  7. Once the chocolate mendiants have set, gently peel them off the baking paper. Check that the fillings are securely attached and, if necessary, handle them carefully to preserve their decorations. Arrange them on a platter, a slate, or in small bags for an attractive presentation.
