Quince paste in the Thermomix

Making quince paste in the Thermomix is ​​so easy you won't believe it 🙂.

Ingredients · Servings 12
  • Water - 1000 grams
  • Quinces - 1000 grams
  • Powdered sugar - 700 grams
Method · 3 h 35 min
  1. Put 1000 grams of water in the Thermomix bowl.
  2. Add the Varoma.
  3. Place 1000 grams of washed, peeled, cored and sliced ​​quince in the Varoma in the Thermomix bowl.
  4. Cook for 45 min/Varoma/Speed ​​Spoon.
  5. Remove the Varoma.
  6. Empty the bowl and then place the quince pieces in the Thermomix.
  7. Add 700 grams of caster sugar to the Thermomix bowl.
  8. Place the steaming basket in place of the measuring cup on the bowl lid to prevent splashing.
  9. Cook for 25 min/Varoma/speed 4.
  10. Transfer to a gratin dish lined with baking paper and leave for 2 hours.
  11. Once it's dry enough, you can cut the dough into sticks, squares, or small diamonds.
  12. You can roll them in powdered sugar, but it's not mandatory!

It is often served cut into pieces to be eaten. It is usually covered with sugar, mainly to harden it a little more and prevent it from sticking too much to the fingers.

Quince paste goes very well with cheese and crackers, try it with goat cheese or hard cheeses.

Put 1000 grams of water in the Thermomix.

Place 1000 grams of washed, peeled, cored and sliced ​​quince in the Varoma and cook for 45 min / Varoma / then remove the Varoma.

Add 700 grams of powdered sugar to the Thermomix and cook for 25 min / Varoma / speed 4 with the cooking basket in place of the measuring cup on the lid of the bowl to avoid splashing.

Transfer the contents of the Thermomix into a gratin dish lined with baking paper and then leave for 02 hours.

I collected the juice that I had set aside to make jelly, once the quince paste was finished, I weighed and added my juice, added sugar (generally 100 to 200g less than the weight of fruit or juice), added a sachet of agar-agar and cooked it for 30 minutes in Varoma mode and speed 2. The texture of the jelly was perfect.

cflo68 rated this recipe 5/5, 3 years and 11 months ago. Easy to make, lovely texture, dried on a baking sheet lined with parchment paper for 4 days, then another 3 days once cut into cubes. I dried the pieces with a little paper towel before rolling them in granulated sugar (it's better to use caster sugar, it melts less). We'll see how long it keeps (I hope I can put little bags in my Christmas baskets if it keeps). I didn't keep the juice for the jelly because I put too much water in the pot. Thanks @minou, I never would have thought of trying this, not being a fan of fruit jellies in general (bad memories from summer camp )...

I put them in the steaming basket. In the bowl, I put the water (reserved from the first recipe) with half its weight in sugar (brown sugar, I didn't have any white sugar left)! And I cooked it for 30 minutes at Varoma temperature, speed 2. No lemon because I didn't have any, nor agar-agar. It set nicely and the quince flavor is definitely there. A real treat!!
