Lentil soup with sausages
Lentil soup with sausages is a classic hearty dish that will fill you up and warm you up. The combination of legumes, root vegetables and a delicately smoked flavor creates a balanced whole suitable as a hearty lunch or dinner.

- 200 g lentils
- 2 medium potatoes
- 50 g celery
- 100 g mrkve
- 1.5 liters of meat broth (as needed, or vegetable broth)
- 4 sausages in their own casings (Vienna, Debrecen)
- 2 cloves of garlic
- 40 g butter
- celery stalk (or parsley)
- ground pepper
- salt
- vinegar
- Thickening agent:
- 2 tablespoons plain flour
- 2 tablespoons butter
Method · 1 h 15 min
- Clean and coarsely grate the celery and carrots. Remove and rinse the lentils. Peel and dice the potatoes.
- Fry the grated celery and carrots in butter until pink. Add the rinsed lentils (no need to soak them beforehand), pour in the broth and let it cook.
- After about 15 minutes, add the grated garlic and chopped potatoes and let everything cook until soft.
- Cut the sausages into rounds and add them to the soup. If you want to thicken the soup, prepare a roux of flour and butter, mix well and cook briefly.
- Finally, season the soup with salt, ground pepper, a little vinegar and celery (parsley) leaves and serve.
