Unpretentious sirloin
The unpretentious svíčková offers everything we love about this traditional Czech classic – delicious creamy sauce, tender meat and fluffy dumplings – but in a simpler and quicker version that anyone can handle.

- 500 g beef (lean back)
- 300 g frozen vegetables (for the tenderloin)
- 1 onion
- 50 g English bacon
- salt
- ground pepper
- 1-2 teaspoons thyme
- 6 peppercorns
- 6 balls of allspice
- 4 bay leaves
- 1 sour cream (12%)
- 1 beef broth
- 1-2 tablespoons lemon
- frying oil
Method · 3 h 20 min
- Pierce the meat with English bacon, season with salt, pepper and sprinkle with thyme.
- Heat the oil in a pot and quickly sear the meat on all sides over high heat until browned.
- Then we take it out, fry the onion, frozen vegetables and add all the spices.
- Add the meat, broth and a cup of water to the pot. Simmer under the lid, turning the meat during the stewing process (you can put the whole thing in a baking dish with a lid and bake in the oven). Simmer the meat for about 2.5 hours, basting as needed.
- Remove the meat and blend the sauce, then pour in the cream, blend again and put back on the heat.
- Season with lemon and salt. Chop the meat, add to the sauce and let it simmer for a few minutes.
