Yogurt cake 1,2,3: easy and fluffy

This yogurt cake recipe, using the yogurt cup as a measuring cup, is probably one of the easiest and most popular homemade cake recipes, and one that has been passed from hand to hand the most.

Ingredients · Servings 6
  • 1 lemon yogurt
  • 1 measure (using the yogurt cup) of sunflower oil
  • 2 measures (using the yogurt cup) of sugar
  • 3 measures (using the yogurt cup) of flour
  • 3 eggs
  • 1 sachet (16g) of yeast powder or baking powder
  • Butter or margarine to grease the mold
Method · 45 min
  1. The basis of this recipe is using a yogurt container as a measuring cup, which makes measuring the ingredients much easier. Ideally, you should use lemon yogurt because it gives it a special flavor, but if you don't have any, you can use plain yogurt and add lemon zest to give the cake some flavor.
  2. Preheat the oven to 180ºC. Put the lemon yogurt in a bowl and use the small glass as a measure.
  3. We add the 3 eggs.
  4. We added a measure of sunflower oil.
  5. We also add 2 measures of sugar using the yogurt cup.
  6. We beat everything using the electric mixer until the sugar is completely dissolved.
  7. Finally, we add the 3 small cups of flour and the sachet of baking powder.
  8. Beat everything until you have a smooth, lump-free batter. Once you have a smooth, homogeneous batter, pour it into a springform pan that you've greased with butter and dusted with flour so the cake will be easy to unmold later.
  9. Bake for 30-35 minutes at 180ºC, or until you see that the tip of a knife comes out clean when you prick the center of the cake.
  10. We unmold it and let it cool.

The reason this 1, 2, 3 yogurt cake recipe is so successful is that it's incredibly easy to make and remember. You just need to remember the 1, 2, 3 with the measurements in the correct order: 1 lemon yogurt, 1 measure of sunflower oil, 2 measures of sugar, 3 measures of flour (plus 1 packet of baking powder), and 3 eggs. I think what makes it so easy is that you don't have to weigh anything or wonder what kind of glass the recipe refers to or how many grams each ingredient weighs.

I personally love this cake with lemon yogurt because it gives it a delicious touch that you can enhance if you like by adding a little lemon zest. But if you don't have lemon yogurt on hand, you can also make it with plain Greek yogurt or another flavor.
