White pizza with roasted grapes
Roasted red grapes are life, but we forget that far too often! While they're roasting in the oven, you roll out the pizza dough balls and that's pretty much it. It literally takes 5 minutes to prepare (maybe 10 if you absolutely want your pizzas to be perfectly round!).
In short, a simple, quick and absolutely delicious supper.

Ingredients
2 balls of store-bought pizza dough (or flatbread) (250g each)
The grapes from a large bunch
Olive oil
Balsamic vinegar
Salt and pepper, to taste
½ cup of ricotta
1 cup of grated mozzarella
A few sprigs of fresh rosemary
Rocket leaves
Steps
- Preheat the oven to 400°F and place the rack in the center.
- Place the grapes on a baking sheet. Drizzle with olive oil and balsamic vinegar, then season with salt and pepper. Roast in the oven for 10 to 15 minutes.
- On a second baking sheet lined with parchment paper, roll out the balls of dough. Top the pizzas with ricotta and mozzarella cheese. Add the roasted grapes and sprigs of rosemary.
- Bake for approximately 10 minutes, or until the pizzas are golden brown and cooked through.
- Finish with rocket leaves and a drizzle of balsamic vinegar.
