Baked zucchini croquette recipe for the family

- 50g of grated Parmesan cheese
- 1 egg
- 35g of breadcrumbs

- Preheat the oven to 190°C (375°F). Meanwhile, wash and peel the zucchini. Grate them using the large holes of a grater and place them in a clean tea towel.
- Squeeze the cloth to remove as much water as possible from the courgettes.
- Place the grated courgettes in a bowl and add the grated parmesan, egg, breadcrumbs, chopped mint, and season with salt and pepper.
- Start mixing with a spoon, then with your hands until you obtain a homogeneous mixture.
- Take some of the mixture and form small croquettes with your hands. Place them on a baking sheet lined with parchment paper. Repeat until all the mixture is used. Bake at 190°C (375°F) for 20 minutes, then turn them over and bake for another 15 minutes.
- Let them cool for 5 minutes before eating. And there you have it, the baked zucchini croquettes are ready!
