Canestrelli al burro: the true grandmother's recipe

Canestrelli al burro, here's how to make them

Butter Canestrelli are fantastic! Made in just a few simple steps, they're sweet treats everyone wants to eat.

Perfect as a snack for the little ones at home, they're also excellent enjoyed with friends for a 5pm break over a nice cup of tea.

Done in: a few minutes

Cooking: oven, 180° for 10-11 minutes.

  • Instruments
  • a pastry cutter for canestrelli biscuits
  • cling film
  • a baking tray
  • baking paper
  • a bowl
  • a whip
  • Ingredients for 25 biscuits
  • a couple of hard-boiled egg yolks
  • 4 tablespoons of granulated sugar
  • the grated zest of 1 organic lunario lemon
  • 100 g of potato starch
  • 1 sachet of vanilla
  • 2/3 of a glass of cake flour
  • a 125g stick of butter
  • powdered sugar to taste

Canestrelli with butter, procedure

Cream the butter and sugar. Add the salt and flavor with the grated citrus zest and vanilla. Fold the cooled and finely crumbled hard-boiled egg yolks into the frothy mixture and blend until smooth. Add the sifted flours and knead thoroughly until smooth. Wrap the dough in plastic wrap and let it rest for at least 2 hours.

Once the required time has passed, roll out the dough on a floured surface until it's 5-6 mm thick. Using a biscuit cutter, shape the biscuits and place them on a baking sheet lined with parchment paper. Let them rest in the refrigerator for 15 minutes before baking at 180°C (350°F) for 10-11 minutes. Once cooked, remove from the oven and let them cool before dusting with powdered sugar.
