Beef roast in a pressure cooker

Do you know how many years we've been cooking on the blog? Well, yes, it's been 15 Christmases cooking together. And I'll tell you something, in all this time I've noticed how customs have changed during these celebrations. At first, we made things incredibly complicated and filled the table with a ton of dishes.

It's true that it depends a lot on the number of people at the table, but I think that, especially over the last five years, we've been opting for the easy way out. Dishes that don't stop us from celebrating Christmas without being constantly stuck in the kitchen.

There are simple dishes like baked king prawns or baked turbot that can be prepared just before serving, but there are also many recipes that can be made hours or even days in advance. If you enjoy meat and like to pair it with a good wine, this is an option that might interest you.

It's a beef roast that's easy to make in a pressure cooker, and, get this, it freezes perfectly. That makes things much easier, because you can make it today. Just put it in the freezer and take it out when you need it.

We prepared it days ago. We ate half to make sure it was delicious, and the other half went straight into the freezer. So on the 24th, we'll do what we've been doing for years: go for a walk in the countryside with Camilo in the morning, relax, and not spend the whole day in the kitchen.

  • 1-1.5 kg of beef round
  • A drizzle of extra virgin olive oil.
  • 1 onion
  • 2 cloves of garlic
  • 3 carrots
  • 250 g of shiitake mushrooms
  • 80 ml of white wine
  • 300-350 ml of broth
  • Ask your butcher for a beef round with the netting on – so it keeps its shape while cooking. Season with salt and pepper on all sides and set aside.
  • Chop the onions and garlic cloves. Peel and slice the carrots. Clean the mushrooms and cut them into pieces. Set everything aside.
  • Heat your pressure cooker over medium heat and pour a drizzle of oil into the bottom. Add the meat and brown it on all sides to seal it. Once browned, remove and set aside.
  • In the same oil, sauté the vegetables: add the onion and cook for a few minutes until translucent, then add the carrot, crushed garlic and salt and cook for another 5 minutes.
  • Put the meat in the pot with any juices it has released onto the plate and pour in the wine. Let the alcohol evaporate.
  • Add the beef broth, and if using spices, add them and bring to a boil. Put the lid on your pressure cooker and cook for about 40 minutes once it reaches pressure. After that time, allow the pressure to release naturally, remove the meat, and let it cool before removing the netting and slicing.
  • It features sliced ​​meat served with French fries, mashed potatoes or rice, and smothered with mushrooms and carrots.
