Coconut-Pineapple-Smoothie

An exotic combination of pineapple and coconut, which becomes really creamy with the addition of ripe bananas.

Ingredients · Servings 4
  • coconut
  • Pineapple
  • Banana / Bananas (ripe)
  • Water (up to)
  • a handful of ice cubes
  • n.b. lime zest & juice
Method
  1. First, crack open the coconut: Open two of the three holes using a screwdriver and hammer or a power drill, and pour the coconut water into a container. Using the back of a large knife, strike the coconut in the center with short but firm strokes. After a short time, a crack will appear, and the coconut can be opened. Score the coconut flesh with a small knife and remove it. Peel off the brown skin with a vegetable peeler and briefly rinse the coconut flesh.
  2. Place the coconut flesh in a high-powered blender and add enough water to cover the blades. Blend for approximately 40 seconds. Peel the pineapple and cut it into large chunks. Add the pineapple to the coconut mixture, along with the bananas and ice cubes, and blend the smoothie. Using a KitchenAid Magnetic Drive Blender, select the apple button (smoothie program). Add more water, lime zest, or lime juice to taste and enjoy your smoothie ice cold.
