Easy mini quiches with peas and green asparagus
A picture-perfect addition to (Easter) brunch, a convenient bite on the go, and a nutritious snack, these mini quiches with peas and green asparagus are always a good idea!
With spring just around the corner, we fill these mini quiches with two of our favorite spring vegetables: peas and green asparagus. The result is a delicious, fresh filling, which we season with chives.
We think this is an ideal dish to prepare in advance. The mini quiches keep well in the freezer; you only need to heat them briefly in the microwave just before serving. This also makes them a fantastic snack to keep in the freezer as a quick bite between meals.
Making mini quiches
- Preheat the oven to 180 degrees.
- Grease the muffin tin with a little oil. Then place the thawed pastry sheets in the muffin tin and press down firmly. Trim the edges of the dough.
- Beat the eggs and add the cream. Also add the grated Emmental and finely chopped chives and mix well. Season the filling with salt and pepper and mix again.
- Sprinkle breadcrumbs over the bottom of the pastry sheets to prevent the base from becoming soggy. Then distribute the peas over the mini quiches.
- Pour the egg mixture over the peas. Then place the green asparagus tips on top and add some extra grated cheese.
- Bake the mini quiches for 25 minutes, or until golden brown and cooked through.
- Let them cool slightly before removing them from the muffin tin. Then let them cool further on a wire rack. You can serve the quiches both warm and cold.
