Pan-fried black pudding with apples: a classic and delicious local combination

  • 1 pinch ground cinnamon

  1. Peel the apples, remove the core and seeds, then cut them in half lengthwise before slicing them into thin, even slices. Try to make the slices roughly the same thickness so they cook evenly. This cutting method allows the apples to become tender while still holding their shape nicely in the pan.
  2. Melt the butter in a large skillet over medium-low heat, being careful not to let it brown too much. Add the apple slices to the hot butter and cook for about 5 minutes, stirring gently occasionally. When they begin to brown and soften, add the cinnamon to flavor them without overpowering the fruit.
  3. Arrange the whole black puddings in the pan, around the already browned apples. Make sure they are placed directly on the bottom of the pan, not on top of the apples, to ensure even cooking. If you wish, you can very slightly trim the ends of the puddings to reduce the risk of them bursting during cooking.
  4. Continue cooking for about 5 minutes over low heat, checking the progress of the sausages and apples regularly. Carefully turn the sausages over if necessary so they heat evenly and brown slightly. Season with a little salt and pepper at the end of cooking, being careful with the salt as the sausage is already quite flavorful.
  5. Arrange the sautéed apples on plates or in a warm serving dish, then add the freshly cooked black pudding on top or alongside, depending on your preferred presentation. Serve immediately, while the apples are still soft and the black pudding is piping hot. The result is a classic regional dish: simple, hearty, and incredibly comforting.
