- Pour the heavy cream into a saucepan, then add the white wine and flour. Mix thoroughly with a wooden spoon or small whisk until smooth and lump-free. Heat over low to medium heat, stirring regularly. The cream will gradually begin to loosen and then thicken slightly as it heats.
- Continue cooking for a few minutes, stirring constantly to prevent the mixture from sticking to the bottom of the pan. Once it begins to simmer, reduce the heat slightly and continue stirring until it thickens. This step allows the flour to cook properly and gives the sauce a lovely consistency, perfect for topping nachos or burgers.
- Cut the cheddar into small pieces so it melts more quickly and evenly. Stir it into the pan, adding it in batches if necessary, while continuing to stir. Let the cheese melt gently into the hot base. You will gradually obtain a smooth, glossy, and rich sauce with a melting texture that should remain supple and homogeneous.
- Add a pinch of cayenne pepper, then mix well to distribute the flavor throughout the sauce. Season very lightly with salt if needed, then add a few turns of freshly ground pepper to taste. Taste the mixture and adjust the seasoning accordingly. Since the cheddar is already quite flavorful, it's best to use a light touch to maintain a nice balance of flavors.
