Quick Bolognese Sauce: Just 8 Minutes to Prepare

mixed minced meat (pork + chicken thigh pulp) - 250 g.

tomato sauce - 150 ml;

salt - to taste;

pepper - to taste;

sugar - to taste;

paprika - 1 tsp

Worcestershire sauce - 1 tsp. l.

a mixture of herbs (oregano, basil, marjoram) - 1 tbsp.

Step-by-step preparation

Prepare your dish. Choose a microwave-safe container with a lid; ideally, the bottom should be at least 18 cm in diameter; narrower dishes may require longer cooking times.

Prepare the sauce base. Mix all the sauce ingredients, except the herb mixture, and pour into a container.

Add the minced meat. Spread it evenly over the sauce without stirring—this way, it will gradually absorb the flavors and juices.

Add herbs. Sprinkle the minced meat with the dried herb mixture.

Cover and cook. Microwave at 800W for exactly 8 minutes.

Let it sit. Don't open the door right away: leave the dish in the microwave for another 5-6 minutes—during this time, the minced meat will "cook" in its own steam and become especially tender.

Serve. Before serving, add some fresh herbs and toss gently.

What to serve with

This versatile meat sauce is perfect for the following dishes:

Spaghetti Bolognese is a classic where the sauce plays the main role;

lasagna - the meat layer turns out juicy and flavorful;

moussaka - minced meat will add richness and depth of flavor;

Cannelloni is an ideal filling that does not run and holds its shape well;

baked vegetables with meat filling - for example, peppers, zucchini or eggplant.

Helpful tips

Want a less-fat dish? Use only ground beef or chicken – the flavor will remain vibrant, but the calories will be lower.

To make the sauce richer in flavor, add 1 teaspoon of olive oil to it - it will highlight the spices and make the texture softer.

If the tomato sauce is too acidic, balance the flavor with a pinch of sugar - this will make the profile more harmonious.

For a thicker texture, stir in 1 teaspoon of tomato paste or a little grated cheese after cooking – the sauce will become thicker and will adhere better to the pasta.

Can I cook without Worcestershire sauce? Yes. You can substitute it with a mixture of soy sauce and a drop of balsamic vinegar – it will give a similar spicy-tart flavor.

Should I mix the ground beef with the sauce before cooking? No. It's better to leave the ground beef on top: it will soak up the sauce during cooking, maintaining its texture and juiciness.

How to thicken the sauce? Add 1 teaspoon of tomato paste or a little grated cheese after cooking – this will improve the consistency and add nuanced flavor.

Can I freeze prepared ground meat with sauce? Yes, it keeps well in the freezer for up to 2 months. Defrost it in the refrigerator and then reheat it in the microwave – the flavor will be virtually unchanged.
