How to cook leeks? Boiled, steamed, pressure cooked...
Leeks are a great source of vitamins. However, it's essential to cook them properly to fully benefit from their nutritional value and their mild, sweet flavor.
- 600g white parts of leeks

Boiling leeks in water remains one of the simplest cooking methods. Simply bring salted water to a boil and add the white part of the leek along with the green tip. Split the leek lengthwise, rinse it, and add it to the boiling water. Cook for about twenty minutes before removing it from the water. You can then dress it with olive oil, vinaigrette, or simply a knob of butter.
Pan-frying
To pan-fry, slice your leek and sauté it in a little fat, such as a knob of butter or a drizzle of olive oil. Preheat the oil or butter over medium heat before adding the leeks once the oil begins to sizzle. Once the leeks are lightly browned, reduce the heat and keep a close eye on them to prevent them from burning.
For a delicious leek fondue, cooking in a wok or saucepan is ideal. Melt about 15 to 20 grams of butter or a drizzle of your favorite oil in your pan. Cut the leek into pieces and add them to the wok. Cover and cook over low heat for 20 to 25 minutes. Stir occasionally. You can enhance your leeks with a touch of mustard, crème fraîche, herbs, and spices.
In a pressure cooker (steamed)
Pressure cooking is ideal for preserving all the nutrients in leeks. To cook your leeks in a pressure cooker, start by pouring about 300 ml of water into the pot. You can add a pinch of salt. Wash the leeks, place them in the pressure cooker, and let them cook for about ten minutes.
Cooking leeks in parchment paper allows them to cook gently in their own steam. Cut the leeks in half or into chunks and place them on a sheet of parchment paper. Add a drizzle of olive oil, some herbs, salt, pepper, and perhaps a squeeze of lemon juice. Carefully seal the parchment paper packet and bake at 180-190°C (350-375°F) for about 20 to 30 minutes, depending on the size of the pieces. This method works particularly well for preparing leeks with fish.
The microwave is handy when you're short on time. Slice the leeks into rounds or small pieces and place them in a microwave-safe container with a few tablespoons of water. Cover and cook for about 5 to 8 minutes, depending on the quantity and the power of your microwave. Stir halfway through and check the texture before cooking longer if necessary.
Cut the leeks in half lengthwise or into large chunks. Lightly brush them with oil and season. Cook them at around 180°C (350°F) for 10 to 15 minutes, turning them halfway through. Baking leeks in the oven
To cook leeks in the oven, preheat the oven.
Remove the outer leaves and slice the leeks lengthwise, from the green part to the white, without cutting through to the roots. Rinse them under cold water to remove any excess dirt and sand. Arrange them on a baking dish or directly on a baking sheet. Drizzle with olive oil, season with salt and pepper if desired, and bake for about 20 minutes.
Barbecue cooking
It's perfectly possible to cook leeks on the barbecue. After washing and boiling your leeks in salted water, slice the white parts lengthwise and coat them with olive oil. Then, arrange them on your grill, sprinkling them with coarse salt. Turn them over so that each side is charred. At the end of cooking, you can drizzle them with soy sauce and garnish them with sun-dried tomatoes or a squeeze of lemon juice.
