Nigerian fried rice with chicken and shrimp
Fried rice, nasi, or simply fried rice. You are probably used to it with soy sauce and other Asian seasonings. Nigerian fried rice with chicken is put together differently, and is surprisingly easy to make!
How do they season their fried rice in Nigeria? They do this by first cooking the rice in a homemade chicken broth, a technique also used in the preparation of jollof rice. Next, the rice is seasoned with curry powder, giving it a beautiful yellow color.
The curry powder used to flavor fried rice is not the same as Dutch curry powder, but it is comparable. You can find the correct curry powder, from the brand Badia, in most Asian grocery stores. You can also choose your favorite jar of curry spices.
This is how you make Nigerian fried rice with chicken
- Put a pan with 300 ml of water on the stove. Cook the chicken together with the rest of the ingredients for the broth until done. Remove the chicken from the water and set aside. Save the chicken broth; you will need it later.
- Strain the broth and return it to the pan. Add the washed rice along with curry powder, paprika, salt, and pepper. Bring to a boil. Ensure the rice is not fully cooked, as the fried rice will continue to cook during frying.
- Meanwhile, place a large pan or wok on the heat and heat oil. Add the carrot along with the green beans. After 5 minutes, add the rest of the vegetables and fry for 2 minutes.
- As soon as the vegetables are almost cooked, add the shrimp to the pan. If you are also using liver, add that as well.
- While the rice is cooking and the vegetables are frying, you can get started on the chicken. Sprinkle the chicken with chicken stock and curry powder. Heat oil to 180 degrees in your deep fryer. Fry the chicken until golden brown, about 5 minutes.
- Add the spring onions to the vegetables, prawns, and liver, and also add the cooked rice. Fry the mixture for 5 minutes.
- Serve the Nigerian fried rice with the fried chicken and optionally fried plantain.
