Pan Pacific London snaps up Nomad London’s F&B leader

Pan Pacific London has tapped Mark Lee as its new director of food and beverage.

Pan Pacific London has appointed Mark Lee as its new director of food and beverage.

Lee, who is fluent in Mandarin, takes up his new post at the Michelin key-awarded property on 5 October.

Lee has spent just over a year at Nomad London, where he acted as head of food and beverage. Prior to that he held senior roles across F&B and operations at operators including the Doyle Collections’ Bristol hotel and Ireland’s Adare Manor, where he managed multimillion-euro F&B operations across high-volume dining, banqueting, culinary strategies and events.

In his new role, the hotel said Lee “will oversee and continue to elevate Pan Pacific London’s F&B offerings, focusing on concept development, team mentorship, fostering collaborative cultures and driving commercial excellence”.

Pan Pacific London won the Best Employer award at the Cateys in July.
