Vegan pumpkin pasta with tomato & feta
Autumn is here, unmistakable and inevitable. It's drizzling, the sky is gray, and suddenly you can't leave the house without a sweater. For some, it's the coziest time of year, something they've been eagerly anticipating.
- 1 Hokkaido pumpkin (approx. 740g)
- 2 onions
- 3 cloves of garlic
- 500g cherry tomatoes
- 2 tbsp maple syrup
- 2 tsp pumpkin spice (e.g. from Tante Fine)
- 100g dried tomatoes in oil
- 50 g capers
- 200 g vegan Feta
- 500 g Spaghetti
- 50 g pumpkin seeds
- Salt
- Pfeffer
- olive oil
- Preheat the oven to 200°C (top and bottom heat). Remove the seeds from the pumpkin and cut it into 1-centimeter cubes. Peel the onions and cut them into thin half-rings. Slice the garlic thinly.
- Place the pumpkin, onion rings, and garlic on a baking sheet along with the tomatoes. Drizzle with maple syrup, a drizzle of olive oil, sprinkle with salt, pepper, and pumpkin spice. Mix well with your hands or a spoon. Bake in the oven for 25 minutes.
- Cut the dried tomatoes into thin strips, drain the capers, and cut the vegan feta into small cubes.
- Cook the pasta according to the package instructions, reserving 200 ml of the pasta water when draining. Toast the pumpkin seeds in a dry pan.
- Purée a quarter of the roasted pumpkin mixture with the pasta water. Mix the pumpkin purée with the cooked pasta. Combine the remaining roasted pumpkin mixture with the sun-dried tomatoes, capers, and vegan feta, then add to the pasta and gently fold in. Divide the pasta among plates and serve with roasted pumpkin seeds.
