Vegan oat waffles with apple and pear compote
In the US, waffles are as much a part of breakfast as jam on a roll is for us. It's only for the big family brunch on Sundays that we dig the waffle iron out of storage and remember how wonderful it is to gradually work the batter until the whole house is filled with the aroma of fresh waffles.
- 2 tbsp vegetable oil (for greasing the waffle iron)
- Oat waffles
- 200 g Kölln Instant Flakes
- 100 g flour
- 3 g baking powder
- 50 g brown sugar
- 230 ml Kölln Haferdrink
- 20 ml neutral vegetable oil
- 50 ml carbonated water
- pinch of salt
- Apple and pear compote
- 1 apple
- 1 pear
- 50 ml water
- 0.5 lemon
- 1 Zimtstange
- Toppings
- 100g plant-based yogurt (plain)
- 50 g almond slices
- Oat waffles
- Put all the ingredients for the waffles into a bowl and mix.
- Preheat a waffle iron and brush it with vegetable oil.
- Gradually process the dough into waffles.
- Apple and pear compote
- Wash the apple and pear, remove the cores, cut into small pieces and put into a pot.
- Squeeze the juice from half a lemon and add it to the pot along with the water and the cinnamon stick.
- Simmer for 10 minutes, until you can crush the fruit with a fork.
- Serve the waffles with the apple and pear compote, plant-based yogurt, and sliced almonds.
Besides sugar and cinnamon, powdered sugar, or chocolate spread, you can, of course, also serve the waffles with homemade fruit compote and nuts. During the colder months, however, we only have a limited selection of fruits for the compote. We've therefore opted for apples and pears, which are stored over the winter and thus still available locally. In spring, you can, of course, top the waffles with rhubarb compote, in summer with cherry compote, or in autumn with plum compote. It all depends on what's in season!
We were supported by Kölln for this recipe, which we're very happy about! Instead of regular rolled oats, we used instant oat flakes for our oat waffles. These dissolve instantly, so you won't even notice them in the batter later, except for the taste.
