Stuffed zucchini rolls (5 easy and light recipes)

Stuffed zucchini rolls are a perfect choice for any meal. Whether as a main course for a special dinner or as an appetizer to share at a gathering with friends, these rolls are guaranteed to be a hit.

Ingredients · Servings 4
  • 2 large zucchini
  • 4 tablespoons of olive oil
  • Shall
  • 2 onions
  • 4 cloves of garlic
  • 400g of minced beef and pork
  • Black pepper
  • Oregano
  • 200 ml of white wine
  • 200g of homemade fried tomato
Method · 20 min
  1. Start by washing and slicing the zucchini lengthwise. Cook the zucchini slices on a griddle with a little olive oil and salt. Set them aside once cooked.
  2. In a frying pan, sauté the chopped onions and garlic in olive oil. Add the ground beef and season with salt, pepper, and oregano. Once the beef is browned, add the white wine and let the alcohol evaporate. Add the tomato sauce and mix well. Let it cook for 15 minutes over medium-low heat. Remove from the heat.
  3. Fill each zucchini slice with the minced meat mixture. Roll up the zucchini and place it in a baking dish that has been previously covered with tomato sauce.
  4. Bake at 180ºC for approximately 30 minutes, or until golden brown and bubbly.
