Fluffy gingerbread

You can never have enough mug recipes because they are practical and quick. This time we have a recipe for fluffy gingerbread that smells beautifully of spices. It is soft thanks to the jam and a delicious layer of chocolate on top.

Ingredients · Servings 1 sheet
  • 2 eggs
  • 1.5 cups granulated sugar
  • 1/2 cup oil
  • 1 cup plain flour
  • 2 cups of semi-coarse flour
  • 2 cups of milk
  • 1 tablespoon cocoa
  • 1 baking powder for gingerbread
  • 1/2 packet of gingerbread spice (approx. 10 g)
  • Further:
  • jam
  • chocolate icing
Method · 50 min
  1. Line a deep baking sheet with baking paper. Preheat the oven to 170 °C. Use a 250 ml cup to measure the ingredients.
  2. Beat the eggs with the sugar until foamy, add the milk, oil, both flours, cocoa and gingerbread spice.
  3. Beat for about 3 minutes, and at the end, stir in the baking powder into the gingerbread.
  4. Pour the batter onto the prepared baking sheet and bake for about 20-30 minutes.
  5. After baking (try inserting a skewer into the dough and it should come out dry, without any crumbs), let the gingerbread cool. You can cut it in half and spread the bottom with jam.
  6. Put the top back on, pour over the chocolate icing and decorate.
