A cold dish that combines different colors and flavors in a light and immediate balance
Cold pasta with vegetables
Cold pasta with vegetables is a dish that perfectly embodies the spirit of summer: fresh, light, colorful, and super quick to prepare on hot days when you don't feel like turning on the stove for long. Its origins aren't tied to any specific Italian region, but its popularity has spread worldwide thanks to the simplicity and versatility of its ingredients.
This summer pasta salad is a perfect option for those who want a nutritious meal without sacrificing flavor and freshness. Seasonal vegetables like cherry tomatoes, grilled eggplant, crunchy zucchini, and roasted peppers give the dish vibrant flavor, vibrant colors, and a varied texture that makes every bite interesting and satisfying.
This first course is also an excellent choice for vegetarians, combining the energy of pasta with the beneficial properties and lightness of fresh vegetables. This cold pasta can easily be customized with your favorite or available ingredients: add olives, capers, fresh basil, diced feta or mozzarella, or sunflower seeds for a crunchy touch. Ideal for a packed lunch, an outdoor picnic, or a casual dinner with friends, this salad is a true triumph of Mediterranean flavors.
Ingredients
- Farfalle (or fusilli or rigatoni of your choice) 350 g.
- Pepper 1 pinch
- A few rocket leaves
- Parsley 1 handful
- Salt 1 pinch
Preparation
- Wash the cherry tomatoes and cut them into wedges. Peel the carrots, cut them into small cubes, and cook them in a saucepan of water for about 5 minutes.
- Cut the peppers and eggplant into pieces, and slice the zucchini. Heat a grill with a drizzle of oil and cook the vegetables for a few minutes, until lightly golden.
- Cook the pasta in plenty of salted water and drain when very al dente. Rinse under cold water to stop the cooking.
- In a large bowl, combine the cherry tomatoes, carrots, grilled vegetables, and pitted olives. Add the pasta, basil, parsley, and arugula. Season with extra virgin olive oil, salt, and pepper. Toss well to combine the flavors and serve.
To make your pasta with fresh vegetables even more flavorful, you can add a touch of crumbled feta cheese or mozzarella cubes. If you prefer a bolder flavor, try adding a few capers or a little thinly sliced red onion. For a spicy twist, a pinch of chili pepper can make all the difference. Remember that cold pasta is extremely versatile: you can substitute the vegetables with whatever you prefer or have on hand.
Cold vegetable pasta keeps well in the refrigerator for a couple of days. Be sure to store it in an airtight container to preserve the freshness of the ingredients. Before serving, toss well and, if necessary, add a drizzle of extra virgin olive oil to enhance the flavors.
For an eye-catching presentation, arrange the cold pasta on a large serving platter. Garnish with a few fresh basil leaves and a drizzle of olive oil. You can also add lemon slices around the edge of the plate for a touch of color and freshness. Serve with elegant silverware to create a contrast between the simplicity of the dish and the sophistication of the presentation.
A glass of Vernaccia di San Gimignano DOCG is the perfect accompaniment to this dish. Its fresh, fruity flavor pairs beautifully with the vibrant notes of the vegetables. If you prefer a non-alcoholic beverage, lemon iced tea or mint- and cucumber-infused water are excellent alternatives.
