Porridge with quinoa – quick & easy breakfast

Porridge Quinoa

Ingredients · Servings 4
  • 250 g Quinoa
  • 1 L unsweetened almond drink
  • 125 g blueberries
  • 125 g raspberries
  • 2 Bananas
  • 2 tsp lemon juice, to taste
  • 4 tbsp almonds (unpeeled)
  • 1 tsp cinnamon
  • 2 tsp honey or maple syrup
Method · 25 min
  1. Place the quinoa in a sieve and rinse thoroughly under cold running water. Bring the almond milk to a boil in a saucepan, then gently cook the quinoa for about 20 minutes (follow package instructions). The quinoa should have absorbed almost all of the liquid by the end of the cooking time.
  2. Meanwhile, sort through the berries, wash them, and pat them dry. Peel the bananas, slice them, and drizzle with lemon juice if desired (the lemon juice prevents the bananas from browning). Roughly chop the almonds.
  3. Season the cooked, warm quinoa porridge with cinnamon and honey or maple syrup. Divide it among bowls, top with berries and banana slices. Sprinkle with chopped almonds before serving.
