Fish dish to prepare in advance: cod gratin

- 600g Cod
- 800g Baby potatoes

- 20 cl Fresh cream
- 20 cl Semi-skimmed milk
- 100g Grated cheese
- 30 g Butter
- 2 tbsp olive oil
Method · 1 h
- Preheat the oven to 180°C (350°F). While it's preheating, rinse the baby potatoes, then slice them into even rounds to ensure they cook evenly. Peel and finely chop the onion. Generously butter a gratin dish with some of the butter to prevent sticking during baking.
- Heat the olive oil in a large frying pan or skillet, then add the potato slices. Cook them for a few minutes, stirring regularly, until they begin to soften but don't brown too much. Then add the sliced onion and continue cooking until it becomes soft and slightly translucent.
- Carefully check the cod pieces to remove any remaining bones. Cut the fish into large, even pieces so they will spread easily in the gratin. Place them on paper towels to absorb excess moisture, which will prevent the dish from becoming soggy during baking.
- Arrange a first layer of potatoes and onions in the bottom of the gratin dish. Then distribute the cod pieces evenly. Cover with the remaining potatoes. In a bowl, mix the crème fraîche and semi-skimmed milk, then pour this mixture over the entire dish to soak it thoroughly.
- Sprinkle the grated cheese evenly over the top of the gratin to create a nice, golden-brown crust when baked. Then, dot the remaining butter in small pieces over the entire surface. This step will give you a golden, meltingly soft, and slightly crispy top, which is very pleasant when serving.
- Place the dish in the middle of the oven and cook for approximately 35 to 40 minutes. Check the color towards the end of cooking: the top should be golden brown and the potatoes tender when pierced with the tip of a knife. The cod should remain moist and flake easily.
- Once out of the oven, let the gratin rest for a few minutes so it sets better when serving. If you wish to prepare it in advance, let it cool completely, then cover it and refrigerate it. You can then gently reheat it in the oven before serving, without altering its texture.
