Puff pastry sun tart: the best recipe

Can the puff pastry sun be prepared in advance and reheated without losing its crispness?

  • 2 units of puff pastry
  • 4 slices of ham
  • Isigny crème fraîche
  • 1 unit pink onion
  • grated Emmental cheese
  • black sesame
  • 2 tbsp milk
  • 3 tbsp Maggi flavouring
Method · 20 min
  1. Preheat your oven to 160°C (325°F) using the fan setting. Unroll one sheet of puff pastry. Spread a thin layer of Isigny crème fraîche over it using the back of a tablespoon.
  2. Finely slice your pink onion and scatter it over the cream, then sprinkle with a handful of grated Emmental cheese.
  3. Arrange your 4 slices of ham to cover the entire surface, then sprinkle again with a handful of grated Emmental cheese.
  4. Unroll the second sheet of puff pastry. Spread a thin layer of Isigny crème fraîche over it using the back of a tablespoon. Then place it on top to cover everything, with the crème fraîche facing the grated Emmental cheese. Press down gently with the palm of your hand. Then remove the top sheet of parchment paper.
  5. Place an inverted glass in the center of the puff pastry circle. Cut the pastry into strips (the easiest way is to cut it like a cake into 6, 8, 12, or 16 strips). With the glass still in place, gently twist each strip once or twice.
  6. Mix the milk and Maggi seasoning and brush the mixture over the puff pastry. Sprinkle some of the twists with black sesame seeds, and the center if desired (remember to remove the glass). Bake for 1 hour at 160°C (325°F). Check for doneness. Enjoy straight from the oven.
  7. Tips: Try different variations like smoked salmon and Boursin cheese, sliced ​​gizzards and goat cheese, etc., but remember to use flat ingredients to make twisting easier. Add spices or herbs to taste: chives, garlic, curry, paprika, etc. And for those with a sweet tooth, try a sweet version with chocolate or jam!
