Tuna empanada recipe for Lent, the most classic
The classic "Lenten" empanadas sold in bakeries are very easy to make, as well as being cheap, economical, and delicious.
- 500 grams of puff pastry
- 4 cans of tuna
- ½ chopped onion
- 1 finely chopped garlic clove
- 3 diced tomatoes
- ½ cup of tomato puree
- 1 red pepper
- 2 eggs (boiled and one for glazing)
- 1. Sauté the onion and garlic in oil, add the chopped bell pepper and tomato, cook for a couple of minutes.
- 2. Add the tomato puree and cook until the puree has changed color.
- 3. Let it cool for a few minutes before adding the tuna.
- 4. Roll out the empanada dough and cut into circles.
- 5. Fill with the tuna stew and the boiled egg.
- 6. Brush with egg and bake the tuna empanadas at 200°C for 20 minutes.
