Pumpkin arepa: easy to prepare - Comedera - Recipes, tips and advice for eating better

Pumpkin arepas are a unique option for breakfast or dinner. They're made with cooked pumpkin, egg, and cheese, without the need for flour, and are soft inside with a lightly golden exterior.

Ingredients · Servings 2
  • 300g of peeled and seeded pumpkin
  • 1 egg
  • 60g of grated cheese, preferably mozzarella, soft coastal cheese or farmer's cheese
  • 1 tbsp of chia seeds
  • 1/2 tsp garlic powder
  • 1/4 teaspoon salt
  • Black pepper to taste
  • 1 tbsp chopped fresh cilantro
  • 1 tsp of cooking oil
Method · 30 min
  1. Steam or boil the squash until completely tender. Drain it very well and let it cool for a few minutes.
  2. Mash the pumpkin with a fork until you get a puree. Avoid leaving large pieces.
  3. Add the egg, grated cheese, chia seeds, garlic powder, salt, pepper, and cilantro.
  4. Mix until you get a moist but manageable mixture. Let it rest for 5 minutes so the chia seeds absorb some of the moisture.
  5. Divide the mixture into 4 portions and form small arepas with slightly damp hands.
  6. Heat a non-stick frying pan over medium-low heat and add the oil.
  7. Cook the arepas for 4-5 minutes on each side, until golden brown and firm.
  8. Remove them from the pan and let them rest for 2 minutes before serving.

To make these arepas you'll need pumpkin, egg, grated cheese, chia seeds, salt, pepper, and a touch of garlic powder. You can also add a few cilantro leaves for extra freshness and flavor.
