Stuffed shortcrust pastry focaccia: the foolproof way to recycle leftover cured meats and cheeses

How many times do you arrive at dinnertime with a half-empty fridge and the desire to serve something delicious and satisfying? When time is short and yeast is lacking, stuffed shortcrust pastry focaccias are the perfect solution. With a super-easy dough that doesn't require rising, you can solve last-minute meals.

Ingredients · Servings 4
  • Flour 00 300 gr
  • Water (warm or at room temperature). 165 gr
  • Extra virgin olive oil (EVO) 2 tablespoons

  • Cooked ham 150g
  • Sweet or smoked scamorza 150g
Method · 55 min
  1. Pour the flour into a bowl and make a well in the center, then add the water, oil, and salt. Knead first with a fork and then by hand on a pastry board for about 5-10 minutes, until the dough is smooth and elastic. Wrap the dough in plastic wrap and let it rest at room temperature for at least 20-30 minutes, so it's easier to roll out thinly without breaking.
  2. Roll out the dough with a rolling pin on a floured surface until it's 2-3 mm thick. Use a pastry cutter or glass to cut out circles about 8-10 cm in diameter. Place a piece of prosciutto and a piece of scamorza in the center of half of the circles. Cover with another circle of dough and seal the edges well with your fingers or the prongs of a fork to prevent the cheese from leaking out during baking.
  3. Cook the focaccias in a hot non-stick pan with a drizzle of oil for about 3-4 minutes per side over medium-low heat, or place them on a baking sheet lined with baking paper, brush them with a little oil and cook them at 200°C for about 15 minutes.
